The inulin contained in parsnips is an all-natural prebiotic that nourishes important intestinal bacteria and thus helps maintain a healthy intestinal flora. Dietary fibers support normal digestion. Parsnips also contain easily digestible carbohydrates, valuable proteins, vitamin C, B vitamins, calcium, potassium, and folic acid, and are low in nitrates.
